We are fortunate that the Mourvedre crop from Colibri comes in every year. Being the latest variety, it flowers two-to-three weeks later than the Grenache and Syrah planted at the site. In years where we see frosts late in April or even in early May, we can lose the majority of the other varieties – but not Mourvedre. We always see a great balance between the structure of the wine (acidity, tannin, texture etc.) and the aromatic and flavor characteristics. This wine is loaded with anise, white pepper, fresh tobacco, dried cherry and bergamot.
